Spaetzle

(Homemade German Noodles - pg 20)

4 cups flour
4 eggs
2 tsp salt
1 1/4 cup water

Mix dough and beat until bubbles form. Start two large pots of boiling salted water. Place small amount of dough on wet wooden cutting board and cut thin strips of dough into one of the pots (or use a spaetzle press). When noodles come to the surface, take out and put them into the other pot for a few moments. Proceed in the same fashion with the rest of the dough. Lay out the noodles to dry. Noodles can be frozen and reheated either in the microwave, or in hot water.

This job is much easier with two people. Since the spaetzle freeze well, I always make at least a double batch.
