2 cups warm water
2 Tbs yeast
2 tsp sugar
1 tsp salt
2 Tbs oil (I use olive oil)
5-6 cups flour
Combine water and yeast in a large bowl and let sit for 5 min. Stir in the sugar, salt, and oil. Add half the flour and mix. Add remaining flour and knead until smooth. Cover, and put in a warm spot to rise for about 30 min. (on cold days, briefly warm your oven, then turn it off, and put the bowl in there).
Pull out dough, and divide into small balls. Roll out each piece into the desired size and thickness. Top with desired ingredients.
If making calzones, fold in half and pinch edges. Brush top with melted butter, or spray with cooking spray. Sprinkle with Parmesan and Italian seasoning.
Bake at 450 for 8-12 minutes.

I freeze the calzones we didn't eat, for an easy dinner, or brown bag lunch for Donny. You can reheat the frozen calzones in the oven. Or if Donny takes it to work, he leaves it in the fridge until lunch time (thawed out by then), and then heats it in the microwave.
Makes 7-9 calzones/pizzas.

Great idea...seems quick and easy too. Although the last time Pehr tried to make pizza dough he broke my mixer...glad to see there is no mixer involved in this recipe!!!
What are some topping/combos that you use for the calzones?
For something easy, I just use some spaghetti sauce (thickened with tomato paste) and flavored with some of my favorite seasonings, and use some more of my rotisserie chicken (or sausage), top with parmesan, & mozarella.
PS - I think it's funny that our dish set is VERY similar...if not the same! LOL!
I've also just cooked the pizza dough by it self, and then freeze it. That way, when you just want some pizza, take one or two out of the freezer, thaw it, and top with whatever you want, and stick it back int he oven. (fast, easy meal that way)
