2 1/4 tsp. dry yeast
1 tsp. sugar
2/3 C warm water (110 F)
1 C whole wheat flour
2 C all purpose flour
1 tsp. salt
1/2 C warm milk (110 F)
1 Tbl. olive oil
In a bowl of a stand mixer (with a dough hook), add yeast, sugar, salt, water, and milk. Let sit for a couple of minutes. Add remaining ingredients, holding off on some of the flour. Mix dough, and add as much of the remaining flour necessary to get a soft, smooth, and only slightly sticky dough. Place into a greased bowl, turning once, to get both sides of the dough greased. Lightly cover bowl with plastic wrap, and let rise in a warm place for about 1 hour.
Heat an electric griddle/skillet to 350 F/medium heat, and separate dough into 8-10 equal balls. (Let rest for 10-15 min.) One at a time, roll out dough to about 1/8 inch thick circles. Place on the griddle, and cook for 2-3 minutes, until the top begins to get bubbly. Then gently flip over to cook other side for another 2-3 minutes.
Like most everything, they are best fresh, but can be reheated for later use. They are normally used for making Giros, but we like to use these for making little personal pizzas. They are supper soft and yummy, and my kids even like to just eat them as a snack, or with hummus.
Enjoy!
