Cheesy Ranch Pasta and Sausage in a Skillet
1 Tbl. oil
1/2 lb. Kielbasa, sliced and halved
8 oz. dry pasta
2 C water
1 C milk
2 Tbl. ranch seasoning mix
salt and pepper to taste
1 C shredded cheese (I used half cheddar and half Parmesan - yummy)
Heat oil, and saute sausage lightly. Add remaining ingredients, except the cheese, and bring to a boil. Cover, and reduce heat to a simmer. Stirring occasionally, cook until pasta is done (about 15 min.).
If the sauce is too thin, in a small bowl mix 1 Tbl. milk, and 1-2 Tbl. cornstarch, and add to skillet. Heat and stir, until thickened. Top with cheese, and stir in until all melted and incorporated. Serve hot.
Makes about 6 servings.
