On lazy summer days, the last thing I want to do is make a big hot meal, that ends up with lots of dirty dishes. So these one-dish meals are just what I need.
1 Tbl. olive oil
2 cloves garlic, minced
1 onion, diced (or 1 tsp. dried minced, or powder equivaent)
1/2 lb. Kielbasa sausage, or your favorite (sliced, and halved)
2 C chicken broth
1 can diced tomatoes
about 5 large fresh basil leaves, chopped
1/2 C milk
8 oz. raw pasta
salt and pepper to taste
1 C shredded cheddar cheese (or Monterrey, or pepper jack)
Heat oil in a large skillet, add garlic, onion, and sausage. Lightly saute, stirring frequently. Stir in broth, tomatoes, basil, milk and pasta. Season as desired, and bring to a boil. Cover, and reduce heat to a simmer, until pasta is cooked (stirring occasionally). About 15 min. Remove from heat, top with cheese, and cover again until cheese is melted.
Serve hot.
Makes about 6 servings.
