1 head green cabbage
1 lb. ground beef or turkey
1/4 onion, chopped
salt, pepper, nutmeg to taste
2 eggs
3/4 sleeve of Ritz crackers, ground
some parsley chopped (optional)
Mix everything together except for the cabbage and set aside.
Remove outer leaves of the cabbage, then put the cabbage in a pot with water and bring to boil. Loosen the outer leaves at the stem (you may have to turn the cabbage to get everything tender). Peel off the leaves and set aside. Put a heaping T. of the meat mixture in the middle of each cabbage leaf and roll up. Brown in hot fat on all sides.
In the meantime, you can make a gravy with ground beef or turkey to go with the cabbage rolls. I served mine over Spaetzle. It's also good with rice.
