French Toast Sticks (Freezer ready)

This is a double batch

1 loaf Texas toast
8 eggs
1 1/2 C milk
2 tsp. vanilla
1-2 tsp. cinnamon

Mix all ingredients well.  (I will usually only add 1/2 tsp. cinnamon at a time, because it tends to float at the top, and then only the first few pieces of bread get all the cinnamon.  Then I'll add another 1/2 tsp. whenever it looks like there isn't much left floating at the top.)
Cut the bread slices into 3 sticks, and heat your griddle to 350 F (medium-low).  Dip each stick in the mixture, and place on the griddle.  Cook on each side until brown.  You can spread a little butter on them and eat with syrup, or set them aside to cool completely before freezing.
To freeze:  Lay the cooked sticks on a wax paper covered cookie sheet, making sure they do not touch each other.  Once frozen, you can put them in a freezer bag.
To reheat:  Put the desired amount on a plate, and microwave them for 10-15 seconds (depending on how many you're making).

Enjoy!
