Lentils

Lentils is a legume that's not too well known or used in the United States, yet lentils are rich in vitamins and minerals and are as old as dirt.  Lentils are even mentioned in the Bible,  in Martin Luther's German translation, anyway.  Remember that Esau sold his birthright to his brother Jacob for a mess of pottage (or lentils in the German translation).  You should try this delicious meal and you'll be surprised and add this recipe to your favorites.

1/2 pkg. lentils
2 bay leaves
5 juniper berries (optional)
1 qt. water
1 T beef bouillon
1/3 c. flour
1/4 stick butter
1 onion, chopped
1 T vinegar
1 T tomato paste

Boil lentils, bay leaves and juniper berries in water for one hour.  Drain and reserve liquid.
Brown flour in butter and add onion and sauté.  Add liquid from lentils, bouillon, tomato paste and vinegar.  Salt and pepper if needed.
After 20 minutes of cooking, add lentils.  Heat and serve with Spaetzle and Kielbasa or Knockwurst.
