1 ¼ C flour
¾ tsp. baking soda
¼ tsp. salt
½ C butter/margarine
½ C Peanut Butter
½ C sugar
½ C brown sugar
1 egg
½ tsp. vanilla
Mix peanut butter, butter and sugars, and beat until fluffy. Add egg and vanilla, and mix. Add the flour, soda, and salt, and mix well. Shape dough into 1-inch balls; roll in granulated sugar, if desired. Place 2 inches apart on an ungreased cookie sheet; crisscross with fork. Bake at 375 F for about 10 min. Makes about 2 dozen.

Hint: To avoid the flattening out of the cookie, and keeping it nice and chewy, decrease the butter by 2 Tbs. Also, once you blend the sugars and the butters together, if the mixture seems too soft/runny, put it in the fridge for about 30 min.
