(Also great as a steak salad.)
cherry tomatoes
pearl onions
bell peppers
6-7 long skewers (soaked in water)
Rub
1 tsp. chili powder
1 tsp. granulated garlic
1/2 tsp. cumin
1/2 tsp. coriander
1/2 tsp. oregano
1/8 -1/4 tsp. cayenne pepper
3/4 tsp. salt
1/4 tsp. black pepper
1 lime (2 Tbl. lime juice)
1 Tbl. olive oil
Mix all the rub ingredients, and coat the meat as best as possible. Let marinate in the fridge over night (or at least 2 hours). Thread skewers, and grill over high heat for 5-10 min., turning once or twice. Serve with the Creamy Lime-Cilantro dressing below.
(If you choose to use this recipe as a salad, use breakfast steak pieces. Marinate, grill, and then, slice into bite-sized pieces. Mix with salad of your choice, and use the dressing below. Super yummy!)
Lime Cilantro Dressing
1 pack (3 Tbl.) Hidden Valley Ranch Dressing Mix
1/2 C Mayo
1/2 C sour cream
1/2 C buttermilk or just milk
1 Lime (2 Tbl. juice)
2 Cloves garlic (chopped)
1/2 C chopped cilantro
1/4 C green salsa*
(* I substituted the green salsa with a dash of Cayenne pepper, and 2-3 dashes of garlic powder. Very good.)
Combine all ingredients, mixing well, and chill in fridge.
(For the Kabobs I only made/needed half the recipe.)
